Gluten Free At The Spa ? Cc Gluten Freed

After four grueling years at UC Berkeley, I have finished my degree in Public Health.? My reward?? A relaxing vacation at the spa, Rancho La Puerta.? Located in Tecate, Mexico, this spa focuses on fitness, wellness and nutrition. Being gluten free makes total relaxation difficult to achieve even when at a spa.? Overall, I loved my experience at the Ranch and took home some interesting insights that I hope will improve my gluten free experience.

Insight #1 Constant Vigilance

Although I often write about the importance of focus and effort when it comes to being gluten free eg reading labels on products you?ve bought a thousand times or asking about cross-contamination even when you think the dish is safe, I thought that a place committed to health with a focus on food might be an exception. I thought I could drop my guard. What I found at Rancho La Puerta is that this is simply not the case.

While at the Ranch, I saw a poster advertising their ?Gluten Free Thursday? cooking class.? Here is what happened:

The cooking classes at the spa are usually taught by their Executive Chef, Denise Roa. However, once a week the spa invites guest chefs to teach.? This week, on Gluten Free Thursday, the spa had invited Romney Steele aka Nani, the granddaughter of the founders of the restaurant Nepenthe in Big Sur, California.? The cooking class was set up so that groups of two spa guests would make one dish using a recipe provided by Nani.

I was working with my Aunt Celia on a baked Sea Bass dish with an orange and tarragon relish.? The menu was out of this world.? All of the ingredients were picked fresh from the Ranch?s vegetable garden.? In fact, before starting the class, the spa guests had to go pick (literally) their ingredients from the garden.

All of the recipes were gluten free and things went smoothly for the most part until we encountered a problem: Nani included a recipe for a pea puree that needed some form of chip/starch-medium to eat.? Because this was overlooked when preparing the class, Nani asked one of the workers to go grab some pita bread from the back for the dish.? See the problem?

If someone had blindly accepted the sign on the door saying ?Gluten Free Thursday? they might not even think to ask if the pita bread was gluten free.? My Aunt and I quickly noticed and spoke to Nani about the gluten situation to which she replied ?Well, you don?t have to eat that dish.?? Despite this discouragement, the Executive Chef, Denise, was horrified at the lapse in gluten free practice and grabbed and grilled some corn tortillas to replace the pita bread.

The take away point? Even when places advertise something as gluten free remain vigilant.

Insight #2 Simple Healthful Foods Are The Way To Go

I have read this advice on many blogs, pamphlets, books and websites but I never really understood it.? Ordering simple, healthful dishes can make being gluten free a lot simpler.?? At the Ranch, I found that this was absolutely true. Why is it not until now that I experienced the ease that accompanies simply prepared meals?? Simple foods are hard to find at restaurants!

At the spa every dish was made with ingredients found in their gardens or grown within a 30 mile radius of the Ranch.? When you looked at the meal, you could tell what components made up the dish.? Of course, you should always check about sauces and ingredients but I noticed that dishes that are truly simple and truly healthful aren?t muddled with questionable ingredients.? The Beet and Basil Salad was a salad made up of?well, beets and basil.? The extravagant, calorie-laden entrees that you find at most restaurants make being gluten free so complicated!? If I saw ??Carrot Soup? on a menu at most restaurants, I would not order it.? It may have flour as a thickener, contain malt vinegar or come garnished with fried onion crisps. At the Ranch, I knew the Carrot Soup was made of carrots and more carrots.

I haven?t quite worked out how to use my new insight about simple, healthful foods to improve my gluten free lifestyle but when I do, I?ll be sure to post.? For now, I am simplifying the meals I make at home and trying to choose simple items at restaurants but still accompany my order with a long series of questions.

Insight #3 Apparently, Being Gluten Free Is Hard, So Be Nice To Yourself!

Rancho La Puerta is a spa dedicated to health and fitness. The spa?s clientele are hyper-aware of their diets and have strict exercise regimes.? These people demonstrate the type of dietary discipline I can only dream of.? They eat only what they need. In other words, teeny tiny portions.? They limit their sugar intake, their meat consumption and their dairy consumption.? They exercise every day and, when given the choice, choose the salad entr?e over the hamburger with fries.

Despite the fact that I found their discipline incredible and something to aspire to, I overheard conversation after conversation about how people had ?tried to go gluten free but it was too hard.?? These insanely disciplined and professionally successful people admitted that being gluten free was too much of a challenge!? One woman said ?I felt so great after that month but I just couldn?t keep it up.?

It was so nice and refreshing to hear other people commenting about the difficulty of being gluten free.? It is a thankless job, demanding self-discipline, constant vigilance, intelligence and the ability to not only articulate your needs effectively but to advocate for your health in the face of constant obstacles.? It is funny but talking to the health nuts at the spa about the gluten free diet made me kind of proud that I am gluten free.

Take away point? Every now and then, take a moment to appreciate yourself and all the work you put in to being gluten free.? Most people don?t know how much effort it takes to truly be GF.? Just remember to be kind to yourself and be proud of the fact that you are gluten free.

Although I couldn?t help but think about my blog while at the spa, I did manage to relax and decompress from four tough years at UC Berkeley.? I hope to bring my insights from the spa home with me by practicing constant vigilance, choosing simple healthful meals and appreciating my GF efforts and I hope that you do too!

Spurs get 'nasty' to take 1-0 lead over Thunder

SAN ANTONIO (AP) ? Trailing in the fourth quarter, Gregg Popovich snarled an order in the huddle that the NBA Coach of the Year punctuated with a sharp and angry sweep of his hand.

"I want some nasty!"

But truthfully, Popovich was already getting what he really wanted: the San Antonio Spurs finally in a game they might actually lose.

Popovich's caught-on-camera "nasty" command in Game 1 of the Western Conference finals is likely coming soon to T-shirts, Internet memes and the lexicon of the NBA playoffs for the foreseeable future. But after beating the Oklahoma City Thunder 101-98 on Sunday night for their 19th win in a row ? tying the NBA record for longest winning streak kept alive in the playoffs ? Popovich wasn't flustered by the near-loss.

He was almost grateful for it.

"We wanted it about 15 games ago," Popovich said. "At least I did."

Manu Ginobili scored 26 points as the Spurs escaped a tantalizing near-upset for the young Thunder, who came closer than anyone to beating the Spurs for the first time in 46 days. But a nine-point lead didn't last after the famously mercurial 63-year-old Popovich huddled his lagging team together in the fourth and told them to "get nasty."

"I said that?" Popovich said afterward.

A nationally television audience heard it.

"The heat of the game, stuff comes up," Popovich said. "So I talked to them about they've got to get a little bit uglier, get a little more nasty, play with more fiber and take it to these guys. Meaning you have to drive it, you have to shoot it."

And when they did, the Thunder couldn't keep up.

Kevin Durant led the Thunder with 27 points. Russell Westbrook had 17, and insisted he was OK after taking a spill that was nasty in its own right ? face first, bracing his fall with his hands and sitting under the basket for more than a minute while the entire Thunder bench walked across the court to check on their All-Star point guard.

"I shot good shots, made good passes," Durant said. "Unfortunately, we lost."

After being held to just 16 third-quarter points, San Antonio scored 39 in the fourth. Westbrook chalked it up to a defensive breakdown that "got out of hand" but it still left the Thunder in search of the road win they'll need to in this series to reach the NBA finals for the first time since the franchise moved to Oklahoma City in 2009.

Game 2 is Tuesday night.

"How it happened is irrelevant," Thunder guard Derrick Fisher said of letting a lead slip away. "Whether we lose by 20 or lose by one, we lost."

That's something the Spurs haven't been able to say since April 11. They joined the 2001 Lakers as the only other team to carry a winning streak this long in the playoffs ? and that Los Angeles team did so on its way to a championship.

The Spurs matched the fourth-longest streak in NBA history, and with one more will become just the fourth team to surpass 20. Tim Duncan had 16 points and 11 rebounds, and Tony Parker shook off a dismal start to finish with 18 points.

And of getting "nasty"?

"Pop's always trying to motivate us," Parker said.

But it was Ginobili who steered the Spurs to strike first in a highly anticipated matchup of the West's top two teams for practically the entire regular season. In his first game against the Thunder this year ? he was sidelined by injury in the three regular-season meetings ? Ginobili put up a playoff high after sputtering through the first two series.

"It just happened," Ginobili said. "I don't know how exactly because I haven't scored like this all season long, but it happened and I am very happy about it."

On the other end, Oklahoma City's own Big Three struggled to find its shot early before awakening in the second half. Durant, Westbrook and James Harden at one point through the second quarter were 5 of 21 ? a typically ominous stat line for a trio that had been responsible for nearly 70 percent of Oklahoma City's points through the playoffs so far.

The Thunder were ousted in the Western Conference finals a year ago and were in position for home-court advantage throughout the playoffs until being overtaken by the Spurs in the final month of the season. But it was a fittingly close opener for two franchises with so many similarities.

That includes Thunder general manager Sam Presti ? the architect of the Thunder's rapid turnaround from a 23-win season to consecutive Western Conference finals in just four years ? getting his big break in the NBA as an intern in San Antonio.

And the Thunder didn't even need their own Big Three to keep things close.

They leaned on none more so than Fisher, whose famous game-winner for the Lakers on this same court in the 2004 playoffs has made "0.4 seconds" a phrase that needs no further explanation to the Spurs. Eight years later, and the oldest player in this series at 37, Fisher already met his playoff average at halftime and finished with 13 points.

Gary Neal added 12 points and was the only other Spurs player in double figures.

Harden lost in the first round of his matchup with Ginobili, who's also a lefty and a former Sixth Man of the Year winner. Harden finished with 19 points on 7-of-17 shooting but started by missing nine of his first dozen shots.

Tipping off another conference finals couldn't happen soon enough for Oklahoma City. With nothing to do but prepare for the Spurs all week ? and be asked about the Spurs ? the Thunder grew weary of questions about being perceived underdogs. About not having the same championship pedigree. About how they'll possibly stop a team rolling through one of the 10 longest winning streaks in NBA history.

So repetitive were the questions that Durant, visibly annoyed, suggested earlier this week that someone instead ask how the Thunder are going "to come at" the Spurs. That didn't stop Oklahoma City from facing more of the same at shootaround Sunday morning, when Thunder coach Scott Brooks tried quashing again the idea his team was somehow intimidated.

"They're not going to be in awe. They're going to have respect for them," Brooks said. "We know we can beat them."

They've still got to prove it.

Notes: Spurs C DeJuan Blair has given the Thunder fits in his three NBA seasons, including 22 points on them in a March win. But San Antonio's starting center for practically the entire season didn't play for the third consecutive playoff game. Smashed Broad Bean Dip with Fresh Mint, Garlic, Manchego and ...

This is just a quick and easy recipe that I wanted to share with you because it is perfect for this time of year. When you can?t be bothered to cook anything complicated but want something fresh and delicious to munch on. This is it.

I found the recipe in a pile of newspaper and magazine clippings that The Washer Up?s dad, Jim had sent me from England. He cuts anything food and drink related out of the Sunday papers and saves them up to send over. It? s very handy for keeping up with what?s going on over there.

The original recipe used 500 grammes of podded broad beans, I didn?t have anywhere near that many so I have adjusted it to suit. It?s one of those things where you can taste it as you go and add more garlic, lemon or mint to your taste.?

If you have young broad?beans that are still very small and bright green you can use them raw. If not you can blanch the podded?beans for two minutes then squeeze the bright green peas out of the pale jade skins and you?re good to go. I know that squeezing broad beans may sound boring bit it?s actually quite a therapeutic thing to do sitting outside in the early evening sipping a glass of mint tea or even a Mojito. It?s worth it just to see that beautiful bright green paste when you?ve done.

Smashed Broad Bean & Mint?Dip

Serves 2-3 as a snack, vegetarian, gluten-free. Adapted from Eat Your Veg

Prep time 15 mins

  • about 200 gr broad beans (podded weight)
  • 1/2 clove garlic
  • 1 tsp salt
  • 5 mint leaves
  • 2 tbsp olive oil (or more)
  • 50 gr grated manchego (or pecorino/parmesan)
  • a squeeze of fresh lemon juice
  • bread to serve, toasted flatbread/baguette/ciabatta or wholemeal toast

Blanch the broad beans (unless very young, tiny & bright green) for two minutes in boiling salted water, drain and then squeeze the bright green peas out of the pale green cases.

In a mortar & pestle, crush the garlic and 1/2 tsp salt to a paste. Add the mint leaves and pound again to a paste. Add a handful of the broad beans and grind to a paste.?Add more beans and continue pounding until you get a slightly chunky textured puree.

Drizzle in the olive oil and mix well then add the cheese, lemon juice and season with salt?and black pepper. Taste and adjust lemon, mint salt as necessary. Serve on/with toasted bread and drizzle with a little more olive oil.

Movie Review: 'Men in Black 3' Mojo Saves Galaxy Again - Snellville ...

It's been a decade since "Men in Black" last defended the galaxy from bad guys. The world has certainly moved on, but the MIB team has not because it's business as usual in "Men in Black 3."

Agent J (Will Smith) and Agent K (Tommy Lee Jones) continue their exploits, this time with Smith going back in time, to 1969, where he teams up with a younger agent K, played by Josh Brolin, to save the future version of his partner and, of course, the world.

The rest of the film is really all about saving Agent K, saving the world from evil aliens and learning a little bit about the back story of each of our favorite G-Men. It ends with plenty of alien interventions and a nice salute to the fan base who has had an ongoing affection for the MIB universe.

The movie script was not completely done when they started production, shedding light on what many have said is a less than perfect movie. MIB3 is a ?redundant extension of a series that ran out of gas a decade ago, and it doesn?t need a neuralyzer to be forgettable.

The Flick-O-Meter gives "Men in Black 3" a three out of five. It's not as good as "Men In Black" (the original) but superior in almost every way to MIB2. Few things in life are worth waiting a decade for, and this isn?t one of them. But after witnessing so many big-screen sci-fi comebacks go so hideously wrong in recent years, "Men In Black 3" emerges as something of a triumph, of sorts.

Interview: Elon Musk on what's next for SpaceX

SpaceX has docked the first commercial spacecraft, the Dragon capsule, at the ISS. Just before launch, SpaceX founder Elon Musk discussed how he hopes to make a difference in orbit...and beyond.

New Scientist: You claim to be getting away from the government-assisted model of spaceflight engineering and the lack of innovation that approach entails. Yet your website says your Falcon 9 rocket's main Merlin engine design is inspired by the Apollo lunar module main engine. So you still depend on government-inspired inventions?

Elon Musk: Heh (laughs). We should probably change that text, it's probably not the best in the world. That's a bit like saying a modern day car is based on what Daimler and Benz did. We're in fact using something that's far more advanced than they had on the Moon, which was a type of injector called a pintle, a large signal coaxial injector - and that was the basic architecture we used. We said that originally because it had to be super safe - it was a single point of failure - and it's a type of engine architecture that is naturally stable and is not subject to combustion harmonics that can cause a combustion chamber to explode.?

NS: What kind of technology do you really want to advance, given the freedom you have to do it your own way?

EM: The really big advance, the fundamental breakthrough that's needed, is a fully reusable rocket system. There was an attempt at that with the space shuttle but it failed. The space shuttle was only ever going to be partially reusable as the main tank - the primary flight structure to which the orbiter and booster were attached was discarded on every mission. And the parts that were reused were so difficult to reuse that the shuttle ended up costing four times more to run than an expendable rocket of equivalent payload capacity. The space shuttle was often used as an example of why you shouldn't even attempt to make something reusable. But one failed experiment does not invalidate the greater goal. If that was the case we'd never have had the light bulb.

NS: Can you outline the economics?

EM: The fuel, oxidiser and pressurant on a Falcon 9 rocket accounts for about 0.3 per cent of the cost of the mission, about $200,000. But each mission costs $60 million because we have to make a new rocket every time.

NS: And SpaceX manages that by doing everything possible in house, without significant outsourcing?

We are trying to make a huge difference - by advancing space technology substantially. To do that we had to design the Falcon rockets from scratch because the space supply chain is just not an effective one. At SpaceX we make the engines, the avionics, the primary structure - I think we've got a fundamentally better design: our airframe, engines, electronics and launch operations are much lower cost.

NS: What about performance though? Anyone can cut costs..

EM: Our engine has the highest thrust to weight ratio of any engine in the world, our airframe has the best mass fraction of any rocket in the world - and our electronics are the lightest and have have the most computing power over that of any other rocket.

NS: What is it that makes your rockets capable of scaling from low earth orbit missions to Mars trips? NASA needs a complete redesign for such ideas.

EM: I am not saying the rockets we have today are suitable for taking people to Mars. Our spacecraft would be pretty uncomfortable for a six month journey. It's the next generation of our rockets that could do that.?

NS: Will they be recognisable evolutions of the Falcon 9 series? Or radically different?

EM: The booster part of it will probably be recognisable compared to the next generation of Falcon we're unveiling this year or early next.?

NS: SpaceX is crew rating your capsule and say your "guiding star" is safety. How much of a challenge is it to crew rate the Dragon?

EM: There's a lot of testing that needs to take place. I made sure the basic design of it is suitable for crew from the beginning. That's why it has windows and returns safely to Earth. The technology driver there is our launch escape system, which has high thrust liquid-fuelled escape engines built into the side walls of the vehicle.?

NS: I gather that these hypergolic motors might have planetary landing applications?

EM: Yes. The escape system's motors will allow the capsule to land anywhere in the solar system, whether it ?has an atmosphere or not - and that's pretty cool. These motors can even fire supersonically which is important for Mars: in the higher altitudes of Mars the atmosphere is so thin that parachutes are completely pointless. So retro thrusters have to be able to fire when you are supersonic so they have to be very high thrust.

NS: What is it about you and your fellow internet entrepreneurs like Amazon's Jeff Bezos, and the Google guys, that is attracting them to commercial spaceflight, with Sierra Nevada and Planetary Resources respectively?

EM: The common thread is that we all have a natural inclination to push the frontiers of technology. And space is a very high capital endeavour. So you need to have done something big to get you the capital to do something in space - you can't just create a start-up with no capital, especially in the rocket business. ?

NS: It strikes me that your tight in-house control of product design mirrors the way Apple works. Do you see similarities? Is SpaceX aiming to be the Apple of spaceflight?

EM: Yes, I guess there are similarities. In the case of Apple they did originally do production internally but then along came unbelievably good outsourced manufacturing from companies like Foxconn. We don't have that in the rocket business. There's no Foxconn in the rocket business. And rocket technology is also considered an advanced weapons technology so you can't really have such a situation - so in our case manufacturing is necessary.

Lower Insurance for EV Drivers? | Hybrid Cars

Although they cost more to buy or lease than internal combustion engine equivalents, electric vehicles not only save in operation costs, it appears insurance premiums can be less as well.

According to Jack R. Nerad, executive editorial director of Kelley Blue Book?s KBB.com, EV owners are considered to be a careful bunch, more mature.

?They?re not the twenty something male who gets into the most fights and has the most car accidents.?

However, given that EVs still represent a tiny fraction of the overall passenger car market, it can be hard to gauge exactly what sort of premiums should be charged for operating one.

Nonetheless, as electric vehicles proliferate, so do insurance policies designed to cover them, leading to a growing level of competition. Hartford Insurance is seizing an opportunity to win over EV buyers, by providing a five percent discount nationwide.

As for the reason, Hartford is saying this because driving an EV shows support for sustainability, although the greater degree of cautiousness among electric vehicle motorists seems to be an underlying theme.

One Chevy Volt owner in correspondence with others said, ?we [all] seem to be less hurried about driving.?

According to Edmunds.com, the estimated average annual premium for a Volt in the first five years of ownership is approximately $1,452, compared to a car such as the Cadillac CTS, with costs around $2,024 per year. It?s a similar saving scenario for the Nissan Leaf, which costs around $1,500 to insure annually; by comparison, a mid-size Maxima sedan is over $1,800.

Yet there is a flipside to this. Due to the level of technology employed in cars such as EVs and plug-in hybrids, some insurance companies are charging higher premiums than regular vehicles, based on the projected costs of repairs.

A spokesperson for insurance company Progressive; Brittany Senary, said ?because newer vehicles with more expensive technology and parts [such as EVs] generally cost more to fix, they?re generally more expensive to insure. We [Progressive] don?t offer discounts because we cannot justify them based on our claims data.?

Clearly it pays to shop around.
